Case Study 2 — Benjamin Thompson, Count Rumford, and the Soup Kitchen That Started a Science

In the autumn of 1797, in the city of Munich, an American-born physicist named Benjamin Thompson was running what was probably the strangest cooking experiment in European history. He was not, by training, a cook. He was a former colonial New England farm boy who had married well, fled the American Revolution as a Loyalist, joined the Bavarian government as a military reformer, been ennobled with the title Count Rumford by the Holy Roman Emperor, and was now, among his many other duties, in charge of feeding the urban poor of Munich.

The poor, in 1797, were many. The city was experiencing a wave of hunger driven by crop failures and warfare. Thompson — who at the time was also conducting groundbreaking experiments on the nature of heat in the boring of artillery cannons — had been given the task of designing a workhouse where the poor could be employed and fed. As part of this project, he needed to feed thousands of people daily on a tight budget. So he sat down and asked himself a question almost no one in his century had asked.

What is the cheapest way to make food maximally nourishing and satisfying?

Cooks had answers, of course. Bavarian cooks knew what worked in their kitchens. French cooks knew what worked in theirs. But these answers were not systematically tested. They were inherited. Thompson — who, again, was a physicist by training — decided to measure. He ran the soup kitchen as a laboratory. He varied ingredients. He varied cooking times. He varied vessel materials. He varied stirring patterns. He served the resulting soups to the workhouse residents, recorded their reactions, and adjusted.

What he discovered, after months of experimentation, was that the most satisfying soups — the ones that left people most full, most warm, and most nourished per calorie — had certain features that contradicted the conventional wisdom of his time.

First: they were not hotter than other soups. In fact, Thompson found that soup served at a moderate temperature (warm to the lips, not scalding) was more satisfying than the same soup served at a higher temperature. He hypothesized that the tongue could not actually taste flavors well at very high temperatures — a hypothesis that has since been broadly confirmed by sensory science. Taste perception is temperature-dependent. The flavors of a soup near boiling are dulled. The same soup, allowed to cool to a comfortable warmth, opens up.

Second: they were thick, not thin. Thompson noticed that thin watery broths passed through the body without lingering, leaving the eater hungry within an hour or two. Thicker soups, with more starch and protein dispersed in the liquid, were more sustaining. He used potatoes and barley and beans to thicken soups that, in their conventional thin forms, had been less satisfying. The science of satiety (Chapter 37) was not understood for another two centuries, but Thompson's empirical finding — thick beats thin for fullness — was correct.

Third: they used long, slow cooking. Thompson found that meat and bones simmered for many hours produced soups with deeper flavors and better mouthfeel than the same meat boiled briefly. He did not know about gelatin or collagen breakdown — these terms came later — but he was systematically discovering, through tasting and recording, that low-and-slow cooking did something to bones and tough cuts that high-and-fast did not. We now know this is the conversion of collagen (the connective tissue protein) into gelatin (a soluble protein that gives stocks and braises their body), a process that takes hours at temperatures around 70–95°C (Chapter 15).

Fourth — and this was the discovery he was proudest of — the cooking vessel mattered, and so did the stove. Thompson redesigned the kitchen's stoves to be far more thermally efficient than the open hearths the Bavarian poor had been cooking on. The "Rumford stove" — a closed iron stove with multiple cooking surfaces and an enclosed firebox — used a fraction of the wood the open hearth required and delivered far more heat to the cooking vessel, with less smoke. Thompson observed that the direction and consistency of heat applied to a soup pot affected the result: bubbling from the bottom, with consistent temperature, produced a different soup than uneven flame from a hearth. He was articulating, in 1797, what we would now describe as the difference between conduction and radiation heat transfer (Chapter 4) — and he was running side-by-side experiments to demonstrate the difference.

The Rumford soup, in its final form, became famous across Europe. Workhouse residents fed on it gained weight. Cost per portion dropped to a fraction of what conventional cooking cost. Thompson published his findings in Essays, Political, Economical, and Philosophical (1796–1802) — a series of papers that, despite the bureaucratic-sounding title, contains some of the earliest systematic scientific writing about cooking ever produced.

The Rumford stove was adopted across Europe and became one of the technological foundations of nineteenth-century domestic cooking. Variants of his soup recipes were used in workhouses, military kitchens, and prisons for over a century. He had, almost by accident, founded a small piece of what would become food science.

And — here is the part that matters for our chapter — he did it the same way Maya is doing it. He hypothesized. He varied one thing at a time. He observed. He recorded. He revised. He served the result and listened to the response. He used a notebook. He wrote things down.

Thompson is not the only example. We could tell similar stories about Marie-Antoine Carême, who in the early 1800s standardized French cuisine through the systematic recording of techniques and the testing of variations. Or Justus von Liebig, the chemist who in the 1840s analyzed the chemistry of meat extracts and developed a process for concentrating beef stock into a portable, shelf-stable product (the precursor to bouillon cubes). Or Auguste Escoffier, who at the turn of the twentieth century reorganized restaurant kitchens around a brigade system that was, in essence, a controlled-conditions laboratory at industrial scale.

We could go further back. We could tell the story of the Yi Yin, a Chinese cook from around 1600 BCE who is recorded as discussing the chemistry of cooking — heat levels, the balance of flavors, the timing of additions — with such rigor that his writings became a touchstone of culinary thought for the next three thousand years. We could tell the story of Ibn Sayyar al-Warraq, whose tenth-century cookbook Kitab al-Tabikh is one of the earliest extant systematic treatments of cooking science, with detailed observations about ingredient interactions and cooking times. We could tell the story of Mary Randolph, whose 1824 American cookbook The Virginia Housewife contains careful experimental observations of regional ingredients and techniques.

The pattern, across all these examples, is the same. Someone — usually working far outside what their society considered "science" — sits down in a kitchen and starts taking the cooking seriously enough to measure it. They try things. They vary one thing at a time. They write down what happens. They serve the result. They learn, and they pass on what they learned.

Count Rumford was a physicist with a budget for soup, a workhouse full of hungry residents, and an empire's worth of authority to redesign stoves. Maya Okonkwo is a software engineer with a $4 spiral notebook and a $7 thermometer and her mother on speaker phone. The scale is different. The status is different. But the practice — and the science it produces — is the same.

Analyze this: Count Rumford's observation that taste perception is temperature-dependent has been confirmed by modern sensory science. What is one practical implication for the way you serve food? Think about soups, but also think about wine, ice cream, beer, and aged cheese. When does serving temperature matter most? When might a warmer or cooler version of the same food taste fundamentally different?

Rumford redesigned the stove because he realized that the quality and consistency of heat — not just the amount — affected the cooking result. Look at your own stove. Are there positions on your stovetop or oven where heat is uneven? How would you test this? What dishes might benefit from your knowing where the hot spots are?

The chapter argues that "the kitchen is the oldest laboratory on earth." Pick one of the historical figures mentioned in this case study (or one not mentioned — Hannah Glasse, Fannie Farmer, Edna Lewis, M.F.K. Fisher, Madhur Jaffrey, etc.) and find one specific way they treated cooking as a controlled experiment. What did they measure? What did they vary? What did they discover that the cooks of their time did not know?
